URBANDALE, Iowa — May is a month of celebrations — Mother’s Day, graduations and Memorial Day. And May is also National Egg Month so why not celebrate our hard-working egg farmers with recipes that are sure to wow mom, your family and close friends.
For some great recipe ideas, the Iowa Egg Council offers the following suggestions.
Get the whole family in the kitchen to make a special breakfast by making a Basic Egg Frittata. Just whisk 4 eggs, 3 tablespoons of milk, 1/4 a teaspoon of dried thyme and a dash of salt and pepper until blended. Add a filling mixture, which can include vegetables, meat, seafood or poultry and cheese. Heat 2 teaspoons of butter in a 6 to 8-inch nonstick omelet pan or skillet over medium heat until hot. Pour in egg mixture and cook over low to medium heat until eggs are almost set, about 8 to 10 minutes. Remove from heat. Cover and let stand until eggs are completely set and no visible liquid egg remains, approximately 5 to 10 minutes. Cut into wedges and serve wedges right from pan, slide uncut frittata topside-up onto platter, or invert frittata onto platter to show its nicely-browned under-side.
High school and college graduations won’t look the same this year due to the pandemic; however, that doesn’t mean the graduate can’t still be celebrated. Show him, or her, anything is possible even the Daredevil’s Impossible Cake. Preheat the oven to 350 degrees F, and spray a 12-cup Bundt pan with nonstick cooking spray. Spread 1/4 cup of cajeta (Mexican caramel sauce) in the bottom of the Bundt pan. In a mixing bowl, add 1 box of chocolate fudge cake mix, 1 1/2 tablespoon of cinnamon, 1 1/4 cup of water, 1/2 cup of vegetable oil and 3 eggs. Mix until all ingredients are well combined. Pour mixture into the prepared Bundt pan. Place 4 eggs, 1 cup of milk and 1 14-oz can of condensed milk into a blender. Blend for 10 seconds or until all ingredients are mixed completely and pour mixture over batter. Cover Bundt cake pan loosely with aluminum foil and place in a roasting dish. Place in center oven rack and fill roasting dish with 1-inch of boiling water. Bake for 45-50 minutes or when tested with a knife, it comes out clean. Remove from oven and water bath. Uncover and let cool for at least 2 hours. Place a large cake plate over the Bundt pan. Invert quickly and remove the pan. Top with more cajeta sauce. Slice and serve with dollops of whip cream.
Just as other celebrations look different this year, there is a good chance Memorial Day may as well; however, the kick-off to summer must go on! A Memorial Day celebration isn’t a celebration without the summer favorite — deviled eggs. Not just any deviled eggs, but Summer BBQ Deviled Eggs. Hard boil 6 large eggs, let cool. Slice in half and remove yolks and place in a separate bowl. Add 1/2 cups Cole slaw dressing, 2 cups coleslaw, and 3 teaspoons mustard to the yolks. Mix until well-blended and divide into egg white halves. Top with 2 cups (divided amongst egg halves) diced pre-cooked BBQ chicken or shredded pork. The coleslaw and BBQ chicken give a new taste to a party favorite.
