IFT15 features latest food trends

CHICAGO — IFT15, hosted by the Institute of Food Technologists, will take place July 11-14, and will feature the latest food products, the hottest food trends and the most important developments in the science of food.

The theme for IFT15 is “Where Science Feeds Innovation.” It will be held at McCormick Place South in Chicago.

A special interactive exhibit on the expo floor called the Transformation Lab will feature specialists providing information about the latest thinking on the food disgestion and health connection.

Featured lecturers will be Dr. Mark Post, chair of physiology and vice dean of biomedical technology at Maastricht University; and Dr. Mark Heiman, vice president and chief science officer for MicroBiome Therapeutics.

Post will share his experience in developing the world’s first lab grown beef (made from stem cells) to address the global need for more sustainable meat production. Heiman will discuss his research into the way food and food ingredients modulate the gastrointestinal microbiome.\
