FSIS lists chickens products for salmonella test

WASHINGTON — USDA's Food Safety & Inspection Service has issued a notice to inspectors that all young chicken product classes are included in carcass-based salmonella and campylobacter verification testing program.

FSIS said a previous notice may have inadvertently been misunderstood as applying only to broilers.

All chickens in the "Young Chicken" product class are to be sampled. These include Rock Cornish game hens, broilers, fryers and roasting chickens. Chicken products classes not subject to sampling are capon, hen, fowl, baking chicken or stewing chicken and cock or rooster.
